I recently shot a short film with an ARRI AMIRA, on 4K UHD 3840x2160. I was wondering what percentage can I zoom in on the footage if we are delivering in HD, without losing considerable quality.

there's no rule of thumb.
Since AMIRA doesn't have a true 4K sensor, the 4K UHD you recorded has already been enlarged by 1.2 (it originates from 3200x1800).
Give it a try, have a look at it on the target device/screen.
If it becomes too soft you've gone too far or use sharpening in post.
